Preparation Instructions
Step 1: Preheat Oven and Prepare Baking Sheet
Preheat the oven to 450°F (230°C). Line a large rimmed baking sheet with parchment paper or lightly grease it with olive oil to prevent sticking.
Step 2: Prepare the Garlicky Caper-Lemon Marinade

Step 3: Prep the Cabbage
Remove wilted outer leaves from the cabbage. Stand the cabbage upright on a cutting board and slice through the core to halve it. Place each half flat-side down. Slice each half into 1½-inch-thick wedges, removing any tough core remnants from the base of each wedge.
Step 4: Marinate and Roast
Arrange cabbage wedges flat-side down on the prepared baking sheet, spacing them apart. Spoon half the marinade over the wedges and gently massage into crevices with fingertips. Season lightly with salt and pepper.
Step 5: Roast Until Tender and Caramelized
Roast for 25–30 minutes, rotating the sheet pan halfway, until edges are golden and caramelized, and wedges are tender (a fork pierces easily).
Step 6: Finish and Serve
Transfer wedges to plates. Drizzle remaining marinade over wedges, sprinkle with herbs, and serve immediately.
